1. Why and how did you decide to start a food business?
After being downsized at my position in the corporate world I wanted to do something that was a part of my "spirit" and something I loved sharing. And that was cooking and sharing with others...something my mother did often back home where I grew up and also when we came here. She always took little and made it special and shared it with others. I felt food and drink was what brought people together and created special friendships. After closing the food truck, moving to a restaurant and then closing the restaurant it was important to keep the "legacy" going by offering certain items created and shared at the restaurant.
2. How long have you been in business?
From the very beginning to now, it has been 11 years, but the current business is only a little less than 2 years old.
3. How has owning a business changed now from when you first got started?
While it was a challenge starting up and learning so many things, how to navigate the various aspects of business and the system, I don't think much has changed with this new venture. It is just another industry to learn and navigate. You are always learning, always discovering and always challenged.
4. Can you please tell us about your signature items?
At this time they are primarily Ready to Serve Caribbean cocktails and Caribbean inspired condiments. While they are both completely different, they are all based on my past and my family's heritage. They are based on many things I grew up with.

5. How has utilizing the food business programming and/or incubator kitchen in Eastern Market impacted your growth as a business?
There is no doubt that being a part of the kitchen at Eastern Market and especially working with Ederique over the years, both has helped me to grow, meet people who helped me along my journey and gives me a place to come back to once in a while to ground myself.
6. Do you have advice for future food business entrepreneurs?
There are so many people and organizations out there that have so much advice to offer. Many are good. For me, it is basic -- Believe in what you dream, be true to what you dream and focus on making the dream a reality with hard work, perseverance and integrity.
Les & Norma will be in Shed 5 at Eastern Market on August 23rd for the Detroit Bourbon and Blues Festival. Follow them on social media for more locations and events!
